French Vegetarian Cooking: In a Nutshell (1999) by Marie-Pierre Moine is a really great cookbook.

It is very short and is very accessible for beginners to cooking French vegetarian food. There is great information about nutrition and the best vegetables to get, a section about herbs and spices, some advice about preparation and cooking tips and what essentials you need in your storecupboard. There is lots of great recipes including Green Salad With Walnuts, Potato And Watercress Soup, Provencale Soup, Tomato Tart, Potato Gratin, Stuffed Tomatoes and Carmelized Upside Down Apple Tart. There is information on regional variations which is very interesting. Also there is a list of further reading material and addresses which might be useful.

It is a really interesting, easy to follow book with a great variety of recipes. A lot of cooking terms are explained very well and it is a really good introduction to French vegetarian food and how to make it.
